Dear Chef Hiro-san, Koisi Sushi Bar was a sublime experience. We ordered the 69 roll, the spicy tuna roll, a rainbow roll, and a salmon avocado roll. Thanks to your hospitable wife and other serving staff, our drinks were served to us alongside a complimentary order of edamame. Thank you! I loved the intimate seating and cool Maui vibe of your lovely establishment. The 69 roll was melt in your mouth savory. It was my favorite of the night. The spicy tuna roll was flavorful and fresh. I loved the lack of sauces as it let the tuna play the starring role. The rainbow roll had plenty of fish eggs in top which added a salty crunch to the bites. The salmon avocado roll was incredible too. You made a salmon fan out of me. The sushi was so fresh and vivid I kept eating so I could stay in these edible moments as long as possible. The fruit palette cleanser was also appreciated. It is with gratitude I express our immense appreciation for our dinner. We will always visit when we come to Maui. Unassuming on the outside, fantastic on the inside. Best sushi I have ever had. Reservations required, it is a small place, but one obviously beloved by many long-time repeat customers, as evidenced by the many saki flasks everywhere. Owner and his family are wonderful hosts, and he is a master at his craft. Highly recommended.

Koiso is my favorite sushi place I've ever been to. This was my third visit from Dallas. Living in Dallas I rarely eat out for sushi because it doesn't match up to what we have in Hawaii. Hoping to visit again next year.

This is by far the best sushi hands down on maui. The service is impeccable. The sushi I'd just beautiful art no fancy rolls here just pure taste of fish and it was an honor to dine here and will definitely be back.

The most authentic sushi on the island and better than almost all of the 100+ places I've been to worldwide. Get the omakase and you will not be disappointed. Hiro-san has a wide variety of high quality fish that he presents very artistically. Call the first day of the month for reservations that month. If you don't, you'll probably miss out. Oishi! Highly recommended.

Always amazing but tough reservation. Omakase plate and sunomono are my go to orders and if I'm feeling hungry, I'll order a few extra pieces of nigiri or the 69 roll. I love the kanpachi, hamachi belly in particularly.

Thank you Chef Hiro-san and Chef Hiro-san's wife. I am so grateful that I had the chance to experience this sushi bar, the food, the service and the environment. Anthony Bourdain has also visited this sushi bar - that should say enough. I ordered the Blue fin Chu-toro, salmon, California roll, spicy tuna roll and 69 roll, and miso soup. They provided a complimentary salted edamame and fresh fruit as desserts afterwards. What can I say, the sushi does not get any fresher than this. The quality, care and art that Chef Hiro puts in all the orders is amazing. If you can, I would advise sitting by the bar. This is a less 15 sushi bar seater. You must have a reservation and you must call to get this reservation. I highly suggest doing so months in advance. This is so far at the top of my list for the best sushi places I have visited. I've tasted numerous AYCE and Non-AYCE in and out of Vegas. It has been almost a week since leaving Maui and everyday I wish I can walk into Koiso and eat their Sushi.

Hiro is lit the 12-piece omakase is you for sure need a reservation (like a month in advance at least) the staff are fun and nice, the store is a cute small sushi spot. definitely worth the $$$. next time I visit, I'll try non-omakase items to see what else is tasty

I've eaten sushi in some amazing places from New York to Los Angeles to Tokyo's Ginza district. Many have been good. None have come close to the pure artistry served up by Chef Hiro at Koiso tonight. The freshest fish, served up artfully. What more do you need? If you're in Kihei or Wailea, you should be eating at Koiso. Full stop. There is no meaningful excuse for why not.

Where to begin... I love this place! First off; it's a family business. Looks like the dad is the sushi chef, mom and daughter are servers. Super cute Japanese family. Also, their system is a bit weird as it felt like waiting forever for your food. But trust me, Be patient! They'd liked to bring out most things at once. And there's only one chef making sushi for 16 people. Moving onto the food. Omgee. It is excellent rice and excellent sushi. I'd say it's comparable to a 4-5 stars sushi high end restaurant in terms of quality and flavoring. And pricing is so cheap! I've NEVER had Omakase (chefs selection) at 55/pp (post is 1/2023). Literally every omakase I've had in my life is at least $98 and above. And I've had quite a few Omakase. Every piece melts in my mouth. Would definitely come back. Ps. You'd need go make at least 1 month out for reservation. I hope they'll still be in business when I come back to Maui in the future. According to the mom, they're getting old so not sure how long they can keep up with the demanding pace. :(
